We are happy to announce this special Mexican-Poblano season with Chiles en Nogada.
Get ready to experience the dish that’s more than just a meal; it’s a work of art, history and flavor joy all in one. This is the story of Mexico on a plate, and we can't wait to share our passion for it with you.
Created by the nuns in the city of Puebla, México this is a seasonal traditional dish that tells of its years of history, from the colors of the Mexican flag (green, white, and red) to its origin story, intended to honor Mexico’s independence leader Agustín de Iturbide.
They took a deep green poblano chile, bathed it in a creamy white walnut sauce, and scattered it with ruby-red pomegranate jewels. Green, white, and red—the colors of freedom— a culinary legend was born. Every time you take a bite of this dish, you’re tasting that same spirit of triumph and creativity.
So, what makes the Chiles en Nogada at Angela's an unforgettable experience?
It all starts with a mild poblano pepperfilled with picadillo, a mixture of ground or chopped beef and pork that is cooked with seasonal fruits, biznaga cactus, spices, and nuts. Then deep fried in egg batter for a fluffy crunch under a creamy walnut sauce called Nogada.
The dish is garnished with pomegranate seeds and parsley leaves to pay tribute to the Mexican flag.

After years of guidance from her mother, Angela fell in love with the culinary art of the Puebla region. Opening her own restaurant at the age of twenty, she realized her dream to create an authentic experience of home-made dishes following in the footsteps of her mother. After almost 50+ years of professional cooking, Angela moved to Boston as she pushed her carreer on to a new level.
